Parkers New American Bistro is located minutes from downtown Cleveland in the Historic Ohio City Neighborhood. The vintage building, constructed in 1865, was remodeled in January of 2002 to feature its original brick walls and worn wood floors. The handsome full service bar constructed of oak and black granite is perfect for drinks and casual dining. The main dining room uses micro-spot lights in a black ceiling to highlight the leather-look tabletops framed in black wood a worthy stage for Parkers main attractions. The seating, which consists of both chairs and upholstered banquettes, is flexible enough to meet most party`s needs. Private dining rooms are available for larger groups. In today`s market that can be a difficult question to answer since chefs and restaurants have blended styles as well as the many ethic cuisines representing regions and nationalities to create an eclectic and cross culture kind of cooking in which there are few rules and no loyalties. Add to this the technologies of preservation and transportation that have made all ingredients available 12 months a year and the result is a seasonless, borderless kind of cooking that defies description. Anything goes. Parker Bosley began his quest for local food sources more than 20 years ago while serving as executive chef at Sammy`s Restaurant, Cleveland`s first truly innovative and forward thinking food establishment. His work with French trained catered Pamela Grossup, another Cleveland pioneer, led him to pursue classic French cooking as an apprentice at Restaurant Michel Pasquet in Paris. On the contrary, at Parker`s New American Bistro means the food is the center of the plate and our network of local sustainable farmers are the motivators. Unlike much of America`s food systems, we know the sources of our food, the production systems of our growers and farmers and we are proud of the mission we have set for ourselves.
